01 The problem
A working bonded winery generates and receives dozens of paper documents a day. Glass shipments arrive with multi-page BOLs. Grape trucks hand over weight tags. Yeast and acid drums show up with packing slips. The TTB issues label approvals. Suppliers send invoices and order acknowledgments. Every one of those documents has to be entered, filed, or referenced — and most of them get photographed on someone's phone, emailed around, and re-typed somewhere downstream.

02 How it works

The capture tool runs in the same Onysko WineTech portal a worker already uses for lots, lab, and bottling. From a phone, a tap opens the camera and grabs one or many pages. Multi-page documents get stitched into a single batch.

An AI classifier identifies what each page is — BOL, weight tag, COLA, packing slip, capsule drawing, invoice — along with supplier hints, confidence scores, and material sub-type for shipments. Multi-page batches get auto-grouped into proposed documents.

The user reviews the proposed groupings (typically just a glance), adjusts if needed, and confirms. Low-confidence pages are flagged for manual review. Documents the user wants to skip can be marked accordingly.

A second extraction pass pulls structured data — line items, quantities, dates, supplier and customer info, validation warnings — and lands it in the appropriate workflow. BOLs into receiving. Weight tags into the harvest log. COLAs into compliance. Invoices linked to packaging orders.
03 Supported document types
Five families of documents, seventeen distinct types — every one of them either arrives on paper or gets handled on paper at some point in its lifecycle. Each type has its own extraction prompt and routes to its own workflow.
Inbound shipments
Material BOLs split by what's on the truck. Each variant has supplier-specific extraction logic for line items, lot codes, and quantities.
Compliance & regulatory
Time-sensitive regulatory documents that need to be on file, searchable, and linked back to the lots and brands they govern.
Material specs
Technical drawings and specification sheets that need to live in a searchable library tied to brand and bottling profiles.
Production & finished goods
The day-in, day-out documents that move with grapes, ferments, and finished cases.
Procurement
Lighter-weight extraction for cross-referencing against material BOLs in the same batch — supplier, PO number, total, line items.
04 In the field
The capture tool was built next to the people using it — warehousemen, cellar leads, lab techs, compliance admins. The interface follows the work, not the other way around.
