Paper doesn't stop arriving.

A working bonded winery generates and receives dozens of paper documents a day. Glass shipments arrive with multi-page BOLs. Grape trucks hand over weight tags. Yeast and acid drums show up with packing slips. The TTB issues label approvals. Suppliers send invoices and order acknowledgments. Every one of those documents has to be entered, filed, or referenced — and most of them get photographed on someone's phone, emailed around, and re-typed somewhere downstream.

Snap from anywhere

The capture tool runs in the same Onysko WineTech portal a worker already uses for lots, lab, and bottling. From a phone, a tap opens the camera and grabs one or many pages. Multi-page documents get stitched into a single batch.

Classify each page

An AI classifier identifies what each page is — BOL, weight tag, COLA, packing slip, capsule drawing, invoice — along with supplier hints, confidence scores, and material sub-type for shipments. Multi-page batches get auto-grouped into proposed documents.

Confirm the grouping

The user reviews the proposed groupings (typically just a glance), adjusts if needed, and confirms. Low-confidence pages are flagged for manual review. Documents the user wants to skip can be marked accordingly.

Extract and route

A second extraction pass pulls structured data — line items, quantities, dates, supplier and customer info, validation warnings — and lands it in the appropriate workflow. BOLs into receiving. Weight tags into the harvest log. COLAs into compliance. Invoices linked to packaging orders.
